Perfect Poriyals

Paalkatti ( paneer )  Beans  Poriyal

Had lots of beans in the fridge. Was just debating , finally I decided to make Paalkatti beans Poriyal  for lunch today. Paalkatti is nothing but our paneer. Freshly ground masala gave a unique flavour. I served this poriyal with garmagaram paranthas and thick curds. Can also serve this poriyal with sambar, rasam and plain rice .

Ingredients

Boiled Beans ( cut to little long pieces ) – 2  cups

Diced paalkatti ( paneer cubes )  –  1 cup

Finely chopped small onions – 1cup

Finely chopped tomatoes  –  1/2  cup

Turmeric powder – 1/4  teaspoon

Salt to taste

Sugar –  2pinches

Dry roast and powder little coarsely

White sesame seeds – 1 teaspoon

Coriander seeds –  1  teaspoon

Peanuts  – 1 tablespoon

Cumin ( jeera ) seeds – 1 teaspoon

Roasted gram ( pottu kadalai ) – 1/2  teaspoon

Dry  red chillies – 4

To Season

Oil – 3  tablespoons

Mustard seeds – 1  teaspoon

To Garnish

Finely chopped coriander leaves and curry leaves –  little

Method

Soak diced paalkatti in a bowl of boiling hot water with a pinch of turmeric . Cover and keep aside.  Heat a pan.  Add oil. Season the mustard seeds. Fry the chopped small onions on medium flame till golden. Add the chopped tomatoes. Sauté on medium flame for 3  minutes. Add turmeric powder, salt and sugar. Sauté for 2 minutes. Add the powdered spices. Add the boiled beans . Mix well. Drain the paalkatti and add it. Sauté on sim flame for 2  minutes. Switch off. Garnish and serve hot.

Chef’s  Tips

1) After adding the paalkatti, do not cook for a long time.

2) While boiling the beans, try to retain the nice, green colour.
