Ghee Roast Double Beans
Ghee is Clarified Butter. Double Beans is available throughout the year in all big Veggie Stores. Double Beans is also available in big Super Markets in packets just like our White Channa in a dry form. There are 2 varieties of Double Beans , White Double Beans and the Red tinged Double Beans. Today, I have used the Dry Red Tinged Double Beans( Dried Double Beans). ( Soak the dry Double Beans in sufficient water. Cover it and leave it to soak overnight. Next morning wash it well in couple of changes of water. Pressure cook the Double Beans in sufficient quantity of water. After 5 whistles, sim the flame and cook for 10 minutes. If using fresh Double Beans pressure cook in sufficient quantity of water for 3 whistles and sim the flame and cook for 5 minutes. ) Goes well with Vegetable rice, Mixed rice varieties,Sambar rice, Rasam rice , Veg Biriyani and Curd rice. Do try and enjoy with your family.
Ingredients
Cooked Double Beans – 2 big cups
Sliced onions – 1 big cup
Sliced green chillies – 2
Turmeric powder – 1/4 teaspoon
Salt to taste
Sugar – 1/2 teaspoon
Curry Masala Powder ( I have used Sakthi Masala Brand Curry Masala Powder ) – 2 teaspoons
To Season
Ghee – 2 tablespoons
Mustard seeds- 1 teaspoon
Asafoetida powder – 1/4 teaspoon
Pepper powder – 1/4 teaspoon
To Garnish
Ghee – 1 teaspoon
Finely chopped curry leaves – 1 tablespoon
Freshly squeezed lemon juice – 1 tablespoon
Ghee Roast Double Beans served with Vegetable Biriyani( made with Jeeraga Samba Rice) and Curd Rice
Method
Heat a big broad pan. Season. Keep the flame on medium. First sauté the sliced onions till light golden. Keep the flame on sim. Add the sliced green chillies. Sauté on sim flame for 1 minute. Add the turmeric powder. Sauté on sim flame for 2 minutes. Add the salt to taste, sugar and the curry masala powder. Sauté on sim flame for 2 minutes. Add the cooked Double Beans. Mix very gently. Roast the Double Beans for 3 minutes on sim flame. Switch off the stove. Garnish and serve.
Chef’s Tips
1) After adding the lime juice, do not heat the Double Beans. The taste will change.
2) Can also add little finely chopped green coriander leaves in the end.
3) While mixing in the cooked Double Beans, mix gently . Do not mash or break the Double Beans. Do not over roast the cooked Double Beans.
