Tumkur Special Puliyogare

Tumkur in Karnataka is famous for tamarind. This puliyogare is reddish black in colour. The first time I tasted this puliyogare in my friend’s place I was totally amazed as to how this dish is prepared. I immediately took the recipe from my friend Saroja Raghavendra. I am extremely happy to share this Special Puliyogare recipe with all of you.

Ingredients( for Puliyogare Masala Powder )

Bydagi dry red chillies – 8

Coriander seeds – 2 tablespoons

Jeera – 1 teaspoon

Methi seeds – 4

Black pepper – 6

Curry leaves – 10 leaves

Method

Heat a pan. Add all the above mentioned ingredients. Dry roast them till golden. Cool. Powder in a blender to a smooth powder.

Ingredients ( for  the Puliyogare Gojju )

Black sesame seeds ( dry roasted and powdered ) – 2 tablespoons

Thick tamarind extract – 1 cup

Jaggery syrup – 3/4 cup

Salt to taste

Method

Heat a pan. Add the tamarind extract and the jaggery syrup. Boil on high flame till it becomes thick. Add the roasted black sesame seed powder. Mix well. The consistency should be like idli batter. Switch off the stove. Keep aside.

Ingredients ( for the Puliyogare rice preparation ) 

Raw rice ( boiled ) – 3 cups

To Season

Gingelly ( sesame ) oil – 4 tablespoons

Mustard seeds – 1 teaspoon

Bengal gram dhal – 1 tablespoon

Urad dhal – 1 tablespoon

Peanuts – 2 tablespoons

Broken  dry red chillies – 2

Asafoetida powder – 3/4 teaspoon

Turmeric powder – 2 pinches

Coconut pieces ( cut to thin slices ) – 1/4 cup ( fried in oil to a golden colour )

Chopped curry leaves – little

Fry all the seasoning items to a golden colour.

Method ( How to mix the puliyogare )

Take a big pan. First add the cooked rice. Top the rice with the puliyogare Gojju. Top the Gojju with puliyogare powder. Top the puliyogare powder with the seasoning. Mix gently. Cover and leave it aside for 2 hours for the flavours to mellow. Mix and serve.

Chef’s Tips

1) Always separate the cooked rice with a fork. The rice grains will not break.

2) Can add little golden fried cashewnuts to the puliyogare.

3) Check the salt. In case if it is a little less add accordingly. Mix gently.
