Gojju Ambode

Dharwad Special Gojju Ambode


Dharwad is famous for Pedas.

Gojju ambode or Bajji ambode is a sister of our Curd Vadai. I learnt this recipe from my close friend Radhika Krishna who lives in Dharwad. I tried at home and the taste was just excellent. The recipe for you.

Ingredients( to make the ambode )

Whole Urad dhal – 3/4 cup

Broken yellow moong dhal ( paasi  paruppu ) – 1 tablespoon

Grated ginger – 1 tablespoon

Chopped curry leaves – little

Salt to taste

Oil –  required amount to fry the ambode


Wash and soak the urad dhal and broken moong dhal for 2 hours. Drain. Grind in a wet grinder to a smooth batter sprinkling little water from time to time. Add the grated ginger, salt curry leaves and mix well.

Heat oil in a pan. Take small bonda sized round balls from the batter. Deep fry till golden. Keep aside.

Ingredients ( to make the Gojju )

Grind  to a fine paste

Grated coconut – 1/2 cup

Dry red chillies -2

Turmeric powder – 1/4 teaspoon

Jeera -1/4 teaspoon

Water – 1/2 cup

Rice flour – 1 teaspoon

Grind all the  ingredients to a fine paste

Thick tamarind extract – 1 cup

Jaggery syrup – 2 tablespoons

Salt to taste

Asafoetida powder – 1/2 teaspoon

To Season

Oil – 2 teaspoons

Mustard seeds – 1 teaspoon

Chopped curry leaves – little

To Garnish

Finely chopped green coriander leaves – little


Heat a pan. Add the tamarind extract. Add the jaggery syrup. Boil on medium flame for 5 minutes. Add the ground paste. Boil on sim flame for 3 minutes. Add salt to taste. Mix. Switch off the stove. Season. Mix. Garnish.

Take  a big bowl. Line the fried ambode. Top the ambode with the Gojju. Soak for 1 hour. Serve.

Chef’s Tips

1) While grinding the dhal, sprinkle little water from time to time and grind to a soft fluffy vada batter.

2)  Gojju Ambode is a very good snack item.
