Omni Bus Pulao with Shimla ( green capsicum ) Mirch Kadhi
Wow! Wow! Omni Bus Pulao, was a very incredible name. When I heard it, I could not believe my ears. I first tasted this Pulao at Uttar Kashi in Ram Singh’s Omni Kitchen. Small omni buses are converted to kitchens, where they prepare and serve this Pulao piping hot with Shimla Mirch Kadhi, Roasted pappad and Vegetable Pickle.
Cooked Basmathi rice – 3 cups
Diced carrots – 1 cup ( boiled )
Chopped beans – 1/2 cup ( boiled )
Green peas – 1 cup ( boiled )
Sliced onions – 1 cup
Kashmiri chilli powder – 1 and 1/2 teaspoon
Turmeric powder – 1/2 teaspoon
Salt to taste
Ghee – 2 tablespoons
Oil – 1 tablespoon
Jeera – 1 teaspoon
Cloves – 4
Cardamoms – 3
Star anise – 2
Bay leaf – 1
Heat a big pan. Season. First fry the sliced onions on medium flame for 5 minutes. Next add the turmeric powder, chilli powder, and salt to taste. Add the boiled vegetables. Sauté for 5 minutes on sim flame Add the boiled rice and mix gently. Serve hot with Shimla Mirch Kadhi.
1) Can add little cubed paneer to the pulao.
