Cheesy Spinach Dip (Indian Style)

Cheesy Spinach Dip

This is an Indian style dip. Spinach when paired with garlic and green chilli, yummy. The blend of flavours is simply amazing. Serve the Dip boiling hot with Beet Bhaji Boxes.

Finely chopped spinach – 1 cup

Finely chopped onion – 1/4 cup

Finely minced garlic – 1 table spoon

Finely chopped green chilli – 1

Boiled cooled milk – 3 cups

Salt to taste

Maida – 1 table spoon

Kashmiri chilli powder – 1/4 teaspoon

Grated cheddar cheese – 2 table spoons

To Season

Oil – 2 table spoons ( I have not used butter , it will become very heavy on the stomach)

Cumin seeds ( jeera ) – 1 teaspoon

To Garnish

Grated Cheddar Cheese –  Little

Coarsely crushed black pepper powder –  2 pinches

Haet a pan. Season. Add the minced garlic. Sauté on medium flame for 3 minutes. Add the chopped onion. Saute on sim flame for 5 minutes. Add the chopped green chilli. Next add the spinach. Sauté for 5 minutes. Add salt , maida and sauté for 3 minutes. Add the chilli powder. Now add the milk. Keep on sim flame. Whisk well . When the mix boils , switch off. Add the grated cheese. Mix well. Garnish again with grated cheese and pepper powder. Serve hot with Beet Bhaji Boxes.

Chef’s Tips

1) In case, the Dip becomes little thick, dilute it with boiled and cooled milk

2) I have used cheese twice, once in the sauce to give a good taste and body to the Dip. Again I have used cheese in the garnish  to give a good presentation and adding cheese twice enhances the taste of the Dip.

3) Do not discolour the Dip.

4) Add salt carefully since cheese is added twice.
